The Carving Out a Niche side quest can be acquired 
The Briar’s Kiss in Final Fantasy 16 once you reach the Follow the Crystals main quest. Here you’ll find a person named Sava and he’ll tell you that he is trying to create a knife but doesn’t how to embodie the spirit of Dalimil in his craft. We’ll take you through the necessary

How to Start The Carving Out a Niche Side Quest in Final Fantasy 16¶
First things first, you’ll need to have completed the main story mission Riddle of the Sands, and be on Follow the Crystals. When those requirements have been met, head over to Sava who can be at The Briar’s Kiss area of 
The Dalimil Inn. Speak with him and you’ll discover that he is been tasked with crafting a knife that embodies the spirit of Dalimil and has no idea where to begin, so Clive has offered to help him solve this mystery.
Where to Find The Limestone¶
Once you’ve finished speaking with Sava, head over to The Markets portion of The Dalimil Inn and speak with the Flesher who can be found near The Baths and Hunter who can be found at the Shop. Here you’ll learn that a knife needs to be strong so it can withstand a lot of damage and is extremely sharp. After you’ve gathered up all the information, return to Sava and combine your ideas. Unfortunately, this information doesn’t help him with making a knife that L’ubor is looking for.
However, he does have one last idea and that’s speaking to a trusted merchant that L’ubor likes to use, so exit The Dalimil Inn via the north entrance and head northwest until you reach The Watcher area of The 
Velkroy Desert which is in the center. When you arrive, join Sava and the Trader and you’ll discover that the key material required is Limestone and Sava has requested you find some for him. Return to The Dalimil Inn and head out of the south gate, then you’ll find some Limestone sitting on the floor to the west.

Explore the surrounding area to find any chest, as this could contain useful crafting materials and accessories, then return to the The Briar’s Kiss and give Sava the Spring Limestone to bring the quest to a close and you’ll be rewarded with a single 
Goblin Coin which you can sell at the nearby shop for a large sum of 
Gil.
