The Sky Knight has pretty unimpressive offense and despite the description, will usually have higher Resistance than Defense. However, the biggest reason the Sky Knight is such a strong class to use is because as a flying unit, they are almost completely ignorant of terrain effects (exceptions being stuff like lava which is definitely lethal to be right above). Coupled with their very high movement and you have a unit that can, at worst, act as a ferry to ferry your strongest allies from point A to point B, and at best, a mobile, versatile attacker who can lead the charge.

Sky Knight has a rather unimpressive set of skills, however Darting Blow can give them in-battle Speed on par with Ninjas, helping them to double on enemies and offsetting the drop in in-battle Speed (called effective Speed in the game) that is given by some stronger weapons like Steel Naginata.
