There are a total of 19, but only 13 of them can be found in the world whereas the remaining six are acquired from Ubisoft Connect Rewards. Upon acquiring the 13 around the world you’ll be given the Trophy/Achievement Recrooster

Head over to Cortina River in the Costa Del Mar Region, then climb up to the top of the mountain and you’ll find El Aguila sitting in a box at the edge of the cliff.

Like El Dorado you’ll need to wait until you have acquired the Yaran Story Everything to Lose. Travel to Arrese Farm which is located in the Conuco Region and he’ll ask you to take his fighting Rooster. However, you’ll need to enter the nearby house and collect the Shed Key before you can collect El Gallo Magnifico.
